Caesar Salad Dressing

I enjoy a caesar salad here and there, but I do not enjoy eating a salad with more calories than french fries.  If I wanted that many calories I'd eat the french fries. So I bring to you a little bit lighter caesar dressing. It still has cheese and some mayo, but gets tons of flavor from other ingredients, and some creaminess from plain greek yogurt.

Here's what ya need: 

Fresh grated parmesan, plain greek yogurt, mayo, worcestershire sauce, dijon mustard, lemon, anchovy paste, garlic, onion, salt and pepper. 

Step One: Grate your garlic into your bowl, then grate some onion on to your cutting board. Measure out 1/2 tsp then add it to your garlic. 

Step Two: Add everything else besides your cheese. Whisk together.  

Step Three: Add your cheese and whisk together. Salt and pepper to taste.  I tend to skip the salt because there are already salty ingredients and add a little fresh ground pepper. When I plate the salad I like to add more pepper so I keep it pretty minimal here. That's about it, allow to cool before serving. Enjoy!

The recipe:

3-4 cloves of garlic (unless they are huge like in the picture then do 2)

1 1/2 tsp anchovy paste

2 tbs lemon juice

2 tsp dijon mustard

1/2 tsp grated onion

1 tsp worcestershire sauce

1/4 cup mayo

1/2 cup greek yogurt

2/3 cups fresh grated parmesan (please use fresh, it makes a difference here) 

Salt and Pepper

 

 

The extras

* You can use less garlic here, but I recommend at least 2 cloves for the flavor.

* Use whatever greens you like...romaine, spinach, kale or a mix! 

* This will last for about 6 salads, depending on how into salad dressing you are.
