Meatloaf

This is my grandma's meatloaf, and my mom's meatloaf.  I'll give you fore warning....it's like a meatball in a loaf pan. Maybe I should call it meat(ball)loaf. Anywho, it's Italian like most things my gram made, you will not find ketchup or oats or any of that craziness in this recipe. It's simple and delish.

Here's what ya need: 

Ground chuck, eggs, garlic, basil, parsley, salt, pepper, breadcrumbs, water, parmesan cheese. 

This is a difficult recipe everyone, many steps involved. You will see. 

Step One: Put all ingredients into a bowl, expect bread crumbs and water.

Step Two: Mix bread crumbs and water together then add to meat mixture. 

Step Three: Mix it all together. 

Step Four: Transfer to a loaf pan. 

Step Five: Cover and bake.  
 

See I told you incredibly difficult, and tons of annoying steps. Kidding, obviously.

The recipe: 

2lb ground chuck

6 eggs

8 (small) cloves garlic*

1 1/2 tbs basil

2 tbs parsley

1 cup bread crumbs*

3/4 cups water

Sprinkle top with parmesan cheese

The extras: 

* You can sub ground turkey for the ground meat.  

* Salt and pepper to your taste

*I like to make a salad, peas and lima beans with meatloaf. But you can choose whatever you like!  

* If your garlic is huge use 5 cloves, just remember your flavoring 2 pounds of meat with only a few ingredients. I actually used 10 small cloves, but they were tiny and I love garlic! 

* For the last 30 minutes of cooking I uncover the meatloaf so that it gets a little crispy on top.  Bake at 350 degrees for an hour, then turn up the temperature to 375 degrees for 20-30 minutes. 

* If you have leftover stale bread don't throw it out.  If you let it sit in open air and get dried out and hard, you can grate it and make your own breadcrumbs.  I know it sounds crazy but fresh bread has no extra preservatives, so that means neither will your home made bread crumbs. Just put them in a plastic tupperware in your cabinet or pantry and use then as you would the store bought ones!  Plus then you don't have to throw away the bread.  

* This will serve 5-6 people, unless you're serving amazon warriors that haven't eaten in 3 days.
