Seared cod with chimichurri sauce

I love a quick and easy fish for a weeknight dinner.  What I don't like is a boring steamed fish.  Enter chimichurri, a simple sauce made entirely in a blender or food processor that adds so much flavor to fish (really any protein, and lots of other foods!) with tons of herbs that adds a flavor bomb in your mouth but not inches to your waist.

Fajitas

Who doesn't love Mexican food?  I mean really, not loving Mexican food is like not loving sunshine.  Fajitas, tacos, nachos, burritos...I mean the list is endless and delicious.  And don't even get me started on margaritas, that's a different post all together.  Today I'll try to focus on these fajitas, I did steak but chicken is fare game also.  There is so much flavor going on, you really can keep it simple or go all out with as many toppings as you can think of.  In my world, fajitas make an awesome dinner party idea, add some chips, guacamole, and salsa as an appetizer, a pitcher of margaritas, some Mexican tunes off pandora, and wham bam you have an excellent party, theme and all!

Greek Salad with homemade dressing

Greece is on my bucket list, but until that dream happens, I'll just keep eating greek salad. It's simple, can be lunch, dinner, or a side dish, and you can add or subtract so many things to make it exactly how you like it.  Plus, I am against bottled salad dressings for many reasons. Reason a. there's an awful lot of things I can't pronounce on the back for a vinegar based dressing(or an anything based dressing for that matter). Reason b. they are so easy to make with things already in your pantry, that there is no reason to buy it.  I can list more, but I won't bore you.  Here's my favorite salad of all time, I hope you enjoy it too!
