Guacamole
This is by far one of the recipes I am asked for most often. I never thought about having a "recipe" for guac...just throw in what you like! But after a few not so great tasting bowls, I realized although you can customize it and make it your own, it's great to have a baseline to follow. So I give you that baseline! Now all you need are some chips and friends.... Or just the chips!
Here's what ya need:
Avocados, garlic, jalapeño, red onion, cilantro, limes, kosher salt
Step one: Get your hands on some good avocados! You want them to be just a little bit squishy, with the "skin" being tight, and when you remove the top stem- the part you see, should be green.
Step two: Now that you have perfect avocados, remove the pits and skins, put into a medium size bowl. Mash up the avocados to the amount of chunks that tickle your fancy. Add lime, then stir.
Step three: Chop up the red onion, cilantro, and grate or press your garlic clove. Add all this to the avocado/lime mixture.
Step four: Mash/stir everything together and add salt.
Step five: Taste, add more salt or lime to taste.
*Serve alongside chips, veggies, salsa, tacos, or fajitas!
Recipe:
2 avocados
1/2 jalapeño (I leave seeds in)
1/4 bunch cilantro chopped (about 3 Tbs)
1 garlic clove
1/2 to 1 lime juiced
3 Tbs red onion
1/4 tsp salt
Extras:
-If the first half of the lime is really juicy, wait to add more until the end!
-Feel free to add more or less onion, or add tomatoes!
-Check your seasonings at the end, you may need more lime, salt, cilantro or jalapeño. This is really all about your tastebuds!
-If you want really creamy guacamole, do step two in a food processor, then remove the avocado/lime mixture and add continue steps 3-5.
-If you really dislike cilantro , try replacing it with chives. It will change the flavor a bit, but it will be delicious also!
-Usually this feeds 3-4 people, but double it triple it! Whatever you want!
