A New Sweet Potato Casserole

If you didn't plan your Thanksgiving dinner yet, let me help you out with a side dish.   If you did, let me help you with a any night of the week dinner side dish.  Either way I'm helping you guys right now, got it? Great! In all seriousness, if you're sick of the whole brown sugar, marshmallow, tons of butter, sweet potato shenanigans, here's a new route for you to go.  It's still a casserole, a play on a scalloped/ au gratin potatoes, with a tiny kick thanks to a chili pepper.  It's not hard, and it's good, which for me is always a staple recipe on a holiday (or any day) when you have a million other things to do.

Garlic Chili Overnight Pickles

If you have a garden then you are probably aware of some common phrases I use this time of year.   Like "A cucumber a day!", "We need to have zucchini for dinner, the fridge can't fit anymore." , "Anyone need any tomatoes, I can drop some off".  I love my garden, I really do but sometimes you need to create new things out of what the garden produces everyday!  Enter pickles!, they are the easiest way to use up some cucumbers and pretend they aren't cucumbers.  Plus they can live in the fridge for a month or so, they happened to be the perfect option when you are overwhelmed.

Blender Salsa

Raise your hand if you are the person at a Mexican restaurant that is full before your meal comes out.  My hand is definitely raised!  I love chips and salsa..( and guacamole for that matter). The salsa that comes to the table is so much better than salsa that was sitting on the shelf at the grocery store, no one can deny it.  I easily eat a serving by myself.  Well people I have news for you!  You can make it, and it's so simple.

Sweet Potato Hash

Breakfast might be my favorite meal of the day when I actually have time to prepare the good stuff.  I can never decide what is actually best, eggs, pancakes, waffles, french toast, omelets, the list is endless.  So I tend to eat them all. I love them all equally, but eggs usually means potatoes....(and bacon).  These are the perfect addition to breakfast or brunch. I make them a lot ahead of time and eat them with some fruit when I'm on the go or to go with a quick scrambled egg. And hey, I would never think twice about eating them with chicken or a steak with dinner either.
