Fajitas
Who doesn't love Mexican food? I mean really, not loving Mexican food is like not loving sunshine. Fajitas, tacos, nachos, burritos...I mean the list is endless and delicious. And don't even get me started on margaritas, that's a different post all together. Today I'll try to focus on these fajitas, I did steak but chicken is fare game also. There is so much flavor going on, you really can keep it simple or go all out with as many toppings as you can think of. In my world, fajitas make an awesome dinner party idea, add some chips, guacamole, and salsa as an appetizer, a pitcher of margaritas, some Mexican tunes off pandora, and wham bam you have an excellent party, theme and all! Now I'm excited and am going to have to make these again soon, oh well like I said Mexican food = sunshine, and who doesn't love sunshine!?
Here's what ya need:
Garlic, chili powder, cumin, salt, jalapeños, green chilies, limes, worcestershire sauce, and olive oil, and flank steak.
plus toppings of your choice!
Step one: Make the marinade. Using a food processor, add the garlic cloves first and give it a quick pluse so they chop up nicely.
Step two: Next add everything else besides the meat.
Step three: Add meat, and marinade into a zip-lock bag and place it in your fridge for 4-6 hours, or if you're on top of your game, you can marinade overnight.
Step four: Place meat on grill or broiling pan, I would always choose the grill unless it happens to be 9 degrees when you choose to photograph making fajitas. Anywho, Broil on high for about 6 min each side for medium rare and about 9 each side for medium well. Grill for about the same amount of time on medium high. If your cut of steak is really thick or thin adjust about 2 min either way and check on it.
Step five: This really is optional, you can cook up peppers, onions, or mushrooms to go with the fajitas, I always do. But completely up to your tastes. If so while the meat is cooking cut up 1 red pepper, 1 green pepper, 1 large sweet onion, and 1 pack mushrooms, or any combo of the above. Drizzle about 1 tbs olive oil into a frying pan, add your veggies and cook on medium till they are soft. You can reserve some marinade and throw it right into the pan with the veggies, or simply salt and pepper them!
Step six: After allowing your meat to rest 3-5 min, thinly slice the steak and build your perfect fajita! Enjoy! Drink a margarita for me if they are accompanying the meal!
The recipe:
4 cloves garlic
2 tbs chili powder
1 tbs cumin
2 tsp salt
1/2 tsp jalapeños
1 tbs green chilies
1 tbs worcestershire
1/2 cup olive oil
1/2 cup lime juice (juice from 2 limes)
2 lb flank steak or london broil
Optional accompaniments:
Guacamole
Salsa
Pepper jack cheese
Tomatoes
Onions
Bell peppers
Spinach/lettuce
Red Cabbage
Cilantro
Tortillas
The extras:
* To switch out chicken for steak, use the same marinade. You can bake chicken breasts for about 12 minutes on each side on 350 degrees. Grill it for about 10 min each side on medium high.
* Toco salads, quesadillas, or burritos are good options for leftover meat! You can easily build a whole different meal with leftovers which might be my favorite part.
*You can make the toppings as simple or complicated as you'd like, pick your favorites and go from there!
*Try out guacamole, and/or salsa to make it a festive meal!
* This recipe will feed 5 comfortably.
