The Best Salmon

There’s no denying that I love salmon, it’s probably my favorite fish and if everyone around me allowed it, I might eat it several days a week.  With that said I’ve made/make it a ton of different ways.  And I will deem this the best salmon.  I somewhat stumbled on this recipe.  I have a massive love for Asian flavors and I’m always playing around with different combinations.  This one came about on Christmas Eve.  We were having salmon as part of the seafood feast my Mom makes every year, and I wanted to try something new.  Looking back maybe not the best time to experiment when guests are coming over for a pretty big meal. But luckily this one worked out, and everyone raved about!  There were no leftovers, and I’ve been forced to make it several times since then, not that I'm complaining what so ever.  Just trust me on this one it’s delish.

Here's what ya need:

Olive oil, sesame oil, rice wine vinegar, soy sauce, honey, garlic, ginger, scallions, sesame seeds, salmon, coconut sugar or brown sugar .

Step one: Mix 1/4 cup olive oil, 2tbs soy sauce, 1 tbs sesame oil, 2 tbs rice wine vinegar, 3 cloves garlic, 1/2 inch fresh ginger, and 1 tbs coconut or brown sugar together, whisk it.  Then add your salmon to the bowl. Allow to marinade for 4-6 hours. You can marinade it over night if you want too, but it's not necessary.

Step two: Put salmon on a broiling pan and brush with marinade. Broil the salmon, on high about 4 minutes each side.

Step three: While the salmon is cooking simmer your sauce.  In a small saucepan mix 1/4 cup honey, 2 tsp soy sauce, 1 tsp olive oil, 1 clove garlic (grated), 1/2 inch fresh ginger (grated). Simmer for about 5 minutes stirring occasionally.

Step four: Plate your salmon, then pour sauce on top of each piece, the top with scallions and sesame seeds. Enjoy!

The Recipe:

2lb salmon

Marinade:

1/4 cup olive oil 

1 tbs sesame oil

2tbs soy sauce

2 tbs rice wine vinegar

3 cloves garlic (4 cloves total for this recipe)

1/2 inch ginger (1 inch total for this recipe)

1 tbs coconut or brown sugar

Sauce:

1/4 cup honey

2 tsp soy sauce

1 tsp olive oil

1 clove garlic

1/2 inch ginger

Topping:

1/2-1 tsp sesame seeds

3 scallions cut thinly 

The extra’s:

*A good judgement for portioning salmon is using the size of your index, middle ring and pinky finger.  Unless you have bigger hands than you’d call average(in that cause just use three fingers) it should be a good portion size. 

*This should feed 4 people, and goes great with brown rice or quonia, and green beans and/or broccoli. 

*When you broil anything you want to make sure your top oven rack is as high as it can be.  You want your pan to be as close to the heat source without touching as possible. 

*With salmon cook skin side down first then flip for the last 4 minutes. 

* Look for pure natural honey, farmer's markets is a great place to pick it up!
