Sloppy Joe's
If you know anything about my husband you know college football Saturday's are almost as big as Christmas. He looks forward to them all year long, and every week we are watching all the games. Group texts are going off, flipping between games is a must, and don't even think about watching anything else all day long. With that said, what do I do all day? Nap, cook, eat and repeat! Yupp, he may look forward to the actual games, I look forward to the football food. Win! Win! This is a classic in my opinion, I called them wimpies growing up, most call them sloppy joe's, either way I'll take it. They come together quick, they can hang out in the crockpot all day, and you don't need much to pull them off! (Win! Win! #2)
What ya need: Ground Meat (turkey or beef), bell peppers, yellow onion, tomato sauce, ketchup, yellow mustard, 2 garlic cloves, ground cloves, salt, pepper, rolls.
Step one: Dice up bell pepper, onions, and garlic cloves.
Step two: Brown your meat until it is about half way cooked, remove fat, then add peppers, onions, and garlic. Allow veggies to soften, and meat to finish cooking.
Step three: Mix together tomato sauce, ketchup, mustard, salt, pepper, and cloves in small bowl. Add it to the veggie and meat mixture, stir to combine and allow to simmer for 30 min.
Step four: Assemble into sandwiches and serve! You can use rolls, lettuce cups, or serve with tortilla chips! Anything goes with this recipe, that's why it's a house favorite.
* If you wanted to make this in a slow cooker, complete steps one and two on the stove, then transfer to the slow cooker, mix in the sauce and set to low for 4 hours.
Recipe:
2 lb. ground meat (turkey or beef)
2 cloves garlic
1 medium yellow onion (3/4 cup)
1 large bell pepper ( 1+1/2 cup, can be mixed red and green)
15oz tomato sauce
8oz ketchup (1 cup)
1 Tbs yellow mustard
1/4 tsp ground cloves
1/4 tsp pepper
1/4 tsp salt
Extras:
*Serve this along with a veggie tray, chips and dip, deviled eggs, and a salad and you'll have the perfect football spread.
* You can also make potato wedges for a simple weeknight meal.
* This makes 6 larger sandwiches.
