Ginger Soy Noodles
There’s a small restaurant near my hometown that has the best pasta salad. I go there, get a salad and a large order of the noodles, and I can bet I am not the only one to go there pretty much for the side dish. Actually I know I’m not, my brother’s girlfriend Sherie does the same thing, we have discussed our love for it many times. For two years now, maybe longer, I have tried to re create it. Finally, I can say I think I got close. Not saying exact, but close enough to get a fix. Similar ingredients to sesame noodles, but not quite. Slightly like the noodles you would get from a Hitachi restaurant, minus the butter. You just have to try them, I eat them at all temperatures. Feel free to add or subtract any veggies I have in it. Make it your own, just dear God make it. Eat it for dinner, then breakfast and if your lucky lunch too.
Here's what ya need:
Linguine, Soy sauce, garlic, ginger, rice wine vinegar, sesame oil, canola oil, red pepper flakes, peas, red bell pepper, scallions, and sesame seeds.
Step one: Boil water, add pasta, cook till tender, drain. Obviously.
Step two. While step one is in process make your sauce. Combine soy, vinegar, oils, garlic, ginger, red pepper flakes, whisk together, then set aside.
Step three. Still while step one is in process, get your veggies prepped. If you are using frozen peas you do not have to cook them, the hot noodles will be enough just pour them in the bottom of your dish. Cut the peppers, and scallions.
Step four. Combine everything. Toss then to coat the noodles with the sauce. Top with sesame seeds, and scallions. Then eat them. Like I said you can eat them hot, cold, or room temperature. I probably like them room temperature the best, but I wouldn’t ever reheat it, just eat it probably right out of the fridge! Enjoy!
The recipe:
1/2 lb linguine
1/4 cup soy sauce
4 cloves garlic
2 tbs rice wine vinegar
1 tbs sesame oil
4 tbs canola oil
1/2 inch ginger
1/2-1 tsp red pepper flakes (depends on if you want it spicy)
1/2 cup peas
1 medium red bell pepper
3 stalks scallions
1 tsp sesame seeds
The extras:
-You can add chicken, steak, or shrimp to make this a heartier meal.
-If you’re a mushroom person they would probably be good added in, I just happen to not be a mushroom person.
-1/2 tsp red pepper flakes does not make it spicy just a little added flavor. But feel free to add more.
-This is one noodle dish I really enjoy with linguine, but you can use your favorite noodle, brown rice pasta or quonia pasta work great.
-And If you’re wondering what you’re going to do with the random stuff you bought to make this, besides just make this. Try the salmon it’s pretty awesome.
-This will feed 5ish as a side dish.
