Clean Eating Pancakes

Sometimes you need a little change up in your routine, any routine really, but today I'm talking specifically breakfast routine.  Enter pancakes.  Not all pancakes are created equal.  And these my friends are not your typical, feel guilty later on pancakes.  They are great because like all pancakes, they are a blank canvas.  You can add basically anything you're craving or have on hand to the batter and make it you're own.  I personally like to add a touch a cinnamon, but blueberries, bananas, chocolate chips, anything really is fair game.   So get creative, drop the eggs and whip up some pancakes! ( And now pick up the eggs because you need them to make the batter...oops.)

Here's what ya need:

Coconut milk, coconut oil, eggs, honey. vanilla protein powder, baking soda, baking powder, spelt flour, salt.

 

 

Step one:  Add everything to your blender.  Literally everything.  No certain order or anything just throw it all in there. 

Step two: Pulse, scrape down the sides, and pulse again. 

Step three:  Let the batter sit for a minute, while you melt some coconut oil ( just enough so they don't stick.).

Step four:  Pour batter right from the blender into the pan to form the pancakes.

Step five: If you are adding anything to individual pancakes, instead of the batter, add right after you pour the batter into your pan. 

Step six:  Once you see bubbles in the pancakes, flip it over cook about 1 min and then serve with whatever you choose! Enjoy!

The recipe:

2 cups spelt flour

2 tsp baking powder

1 tsp baking soda

1 cup vanilla protein 

1/2 tsp salt

2 eggs

2 tbs honey

2 tbs coconut oil (plus 1 tsp for pan)

2 1/2 cups coconut milk

The extras:

* These will be a great side dish with eggs, or eat a stack of them alone.

* Top with fresh fruit, honey or maple syrup.
